American Potato Gnocchi with Shrimp & Tomato Sauce

Description of the dish: American potato gnocchi with shrimp has a soft, chewy cheesy texture and a sour taste from the tomato sauce that makes for a very appealing, easy-to-eat, and nutritious dish.

Ingredients for: Potato Gnocdchi

– American purple potato: 1kg

– Wheat flour: 250g

– Egg yolk: 2 pieces

– Powdered Parmasan Cheese: 100gr

– Salt and pepper for seasoning

Tomato sauce ingredients

– Shrimp: 600g

– Cherry tomatoes: 200g

– Tomato sauce: 1 can (250g)

– Garlic: 50g

– Thinly sliced ​​chili: 1 pc

– chopped thyme: 10 pcs

– Olive oil: 100ml

– Pamesan Cheese: 50g

– White wine: 100ml

Processing method:

Steam the purple potatoes (boiled or baked) until tender, then finely mash the potatoes with a sieve.

Add the 2 egg yolks, flour, powdered cheese, and a pinch of salt and pepper and mix well.

Knead the dough by hand for about 5 minutes until the dough is soft, smooth, and not sticky to your hands.

Divide the dough into small balls, then use a fork to gently press each dough ball along the indentation of the fork until it forms.

Boil the gnocchi with boiling water and a pinch of salt, a little oil. When the gnocchi have floated to the surface, remove and immerse in ice water, draining if the gnocchi have hardened.

To make the tomato sauce: Peel the skin of the tiger prawns, leaving the tails, remove the black threads of the prawns.

In a frying pan with a little oil, sauté the garlic and chilies until fragrant, add the tiger prawns and sauté until cooked, add a little white wine, bring to a boil, then add the cherry tomatoes, cinnamon leaves and tomato sauce.

Bring the sauce to a boil, then add the gnocchi and beat all the ingredients until combined, seasoning to taste.

Garnish on a plate: sprinkle powdered cheese on top.

– American Potatoes: 600gr-800gr

– Parmesan cheese: 100g

– Truffle Oil: 50g

– Salt

Ingredients for: truffle ponzu mayo

– Mayo: 300g

– Ponzu Sauce: 35gr

– Garlic: 5g

– Salt: 2g

– Truffle juice: 15g

– Truffle oil: 20g

– Truffles paste: 15g

Processing method:

Turn on the oven or oil-free frying pan at 170 degrees Celsius.

Place all of the sauce mixture in a mixing bowl and use a hand mixer to mix well.

Take enough cups to use.

When the oven is hot, add the potatoes to fry or bake, until they are golden and crispy.

Cover the bottom with a paper towel to absorb the oil and shake well to remove some of the oil.

Then sprinkle with parmesan cheese and truffle oil to coat the potatoes.

Serve on a plate to serve with the prepared sauce.

– American chocolate potato (pink): 500g

– Glutinous flour: 150gr

– White sugar: 50g

– Eggs: 2 eggs

– Milk without sugar: 100ml

– Strawberry jam: 1 can

– A little vanilla essence

– Salt

– Cooking oil

Processing method:

Steam the potatoes (boiled or baked) until cooked, peel the skin and mash while still hot.

Use a bowl to mix the eggs, sugar, fresh milk, vanilla and glutinous rice flour, knead gently with your hands until the dough is smooth and doesn’t stick to your hands.

Divide the dough into portions (40-50g).

Round the dough, press a small hole to put the strawberry jam in the middle, then wrap the dough tightly, pressing gently with your hands.

Continue to make all the remaining mixtures.

Heat the oil in a frying pan, fry the cakes, when the surface is cooked and turns a beautiful golden color, turn the other side until golden brown on both sides.

Place the cake on a plate lined with parchment paper.

Garnish on a plate and enjoy while still hot.
