– In a small bowl, add 1/2 cup of water, 1/2 lemon, 2 tablespoons of sugar and stir to dissolve. This mixture helps to make the rice paper rolls crispy and beautifully colored when fried.
– Spread the rice paper rolls on a cutting board, use a silicone brush to spread a thin layer of the mixture of lemon juice and sugar on the surface of the spring rolls. Use a spoon to scoop out the right amount of filling, then fold the edges and roll it up like a regular spring roll.
– Heat the cooking oil in a pan, put each spring rolls in and fry on medium heat until golden brown (when frying, pay attention to flip the spring rolls so that the spring rolls are evenly browned and not scorched).
– Make the dipping sauce: In a small bowl, add 1 tablespoon sugar, 1 tablespoon lemon juice, 3 tablespoons water. Stir the sugar completely and then add 2 tablespoons of fish sauce and garlic, minced chili, and dill. The sweetness can be increased or decreased depending on personal taste.
