After 2 minutes, remove the potatoes, place them in a bowl of cold water to cool, then remove them to dry. Then put it in the freezer for 3 hours, this will help the potatoes become crispier and less prone to crumbling. Also, that way, you don’t need to add another layer of flour to fry the potatoes.

After 3 hours, put plenty of cooking oil in a pan, heat it to 50%. You put the potatoes in the freezer, dropping them straight into the fryer. If the fries are frozen, you don’t need to thaw them. Fry the potatoes until golden, then remove and allow to cool slightly.

Reheat the cooking oil, after the oil in the boiler is hot, pour in the french fries for the first time and fry again. Frying it twice will make it crispy, so frying it a second time is very important. Just fry them until the potatoes are golden brown, then remove them quickly to drain the oil.
