Material:
– 1 cleaned duck (about 1kg)
– 1-2 cans of beer
– Anise, bay leaf
– Chili, garlic, dried onion, ginger
– Seasoning: Salt, sugar, vinegar, pepper, oyster sauce, soy sauce
Processing:
-Buy the duck, wash it, and then use a knife to cut the part of the fishing line because this part is both foul and not good for health. Take salt, crushed ginger with a little white wine, rub the inside and outside of the duck, then wash it many times to make the duck meat clean and not smelly. Use a towel to pat the duck meat dry and then cut it into bite-sized pieces.
-Ginger peeled and sliced. Garlic, dried onion peeled, minced. Chilli seeds, chopped.
– Heat a pan with a little oil. Add garlic and dried onions to the pan. When the onion and garlic smell, pour in the duck meat and stir-fry. Add sliced ginger, bay leaf, chili, star anise and stir-fry. Tasting spices to taste.
– Add soy sauce, oyster sauce and stir until the duck meat turns attractive golden brown.
-Pour the beer can into the duck pan. Cook on low heat until the water dries up and the duck is tender, then turn off the heat. Note that occasionally use chopsticks to stir the duck to fully absorb the spices.
– Scoop the beer braised duck on a plate, sprinkle with a little pepper to taste and enjoy with rice or white vermicelli.
