Ingredients (6-8 people): 2 tablespoons olive oil, 1 small onion, 1 large carrot, 450g asparagus, 115g peas, 1/2 broccoli, 2 cloves garlic, 230g button mushrooms, 1 tomato, 115g grated feta cheese crumbs, 12 large eggs, 1/2 cup milk, salt and pepper.

Material processing:

– Onion: Peel and finely chop

– Garlic: Minced

– Button mushrooms: Slice into bite-sized pieces

– Broccoli: Split into small branches

– Tomato: Slice

Asparagus: Wash and cut into bite-sized pieces

– Eggs: Break into a bowl, beat.

Implementation steps:

– Heat 1 tbsp cooking oil in a large saute pan over medium heat. Add onion, saute for about 4-5 minutes until onion is soft.

– Add the remaining 1 tablespoon of cooking oil to the pan. Add the carrots, asparagus, peas, broccoli, and garlic and stir, cook for about 8-10 minutes, stirring occasionally until the vegetable mixture is just cooked through. Finally, add mushrooms and tomatoes, cook for another 3-4 minutes, then turn off the heat.

– Preheat oven to 350 degrees F (about 180 degrees C) and spread a thin layer of oil on a 9 x 13-inch baking pan

– Take half of the vegetable mixture, put it in the prepared baking pan and spread it out evenly, forming the first layer of vegetables. Sprinkle half of the cheese evenly over the top and repeat with the remaining vegetables and cheese.

– Put fresh milk, salt, and pepper into the bowl of beaten eggs. Then, pour the egg mixture over the top of the vegetables.

– Bake the egg and vegetables for about 3-40 minutes. To check if the egg is done, poke a toothpick in the center of the egg and pull it out. If the toothpick comes out clean and doesn’t stick to the egg, the dish is done.

– Cooked eggs, cut into squares, eat while still hot

Note:

– Vegetables can be selected according to preferences.

If you don’t like grease, you can boil vegetables, put them in the refrigerator to make them firmer, and then bake them with eggs.
