Sweet and sour fried chicken recipe ideal for summer trays

Make sweet and sour sauce
In a small mixing bowl, stir together ketchup, ketchup, 1 tablespoon oyster sauce, 2 tablespoons plum sauce, 2-3 tablespoons vinegar, garlic, 1 tablespoon honey, ginger, 1/2 teaspoon white pepper, 1/2 teaspoon cornstarch and 100 ml water to make sweet and sour sauce.
Cook pineapple
Step 1: On a saucepan over medium heat, add 2 tablespoons of brown sugar.
Step 2: Add pineapple when the brown sugar starts to melt (you can add a little more water if it feels too thick).
Step 3: Stir-fry for 30 seconds.
Step 4: Remove pineapple and set aside.
Step 5: Add sweet and sour sauce to the same pan and mix well for 1 minute. Set aside.
Coat dough and fry chicken
Step 1: Put the rice flour and tapioca flour into the mixing bowl.
Step 2: Add the cubed chicken and mix to coat the chicken evenly.
Step 3: Fry the chicken by putting the cubed chicken in a pot over high heat, pour in half of the vegetable oil.
Step 4: When the chicken pieces turn golden/light brown, take the chicken out.
Step 5: Place on a paper towel to absorb excess oil.
Cook sweet and sour chicken
Step 1: On a pan over high heat, add vegetable oil to cook the chicken.
Step 2: When the pan is hot, add the onions, red and green bell peppers and sauté for one minute.
Pour in the sweet and sour sauce and bring to a boil.
Step 3: Cook until thickened in less than 1 minute, then add pineapple and fried chicken, stir and mix well.
Step 4: Add the green onions and turn off the stove immediately.
