Contacting Ms. Phuong, a focal point selling stick ribs on the online market, said that the stick ribs, also known as the stalk ribs, are the ribs that are peeled off from the large piece of meat in the breast of the pig, of the same size. The rib is characterized by a small, flat bone surrounded by meat.

“This type of ribs has quite soft meat around, alternating fat, so it doesn’t dry out and can be processed into many different dishes, from grilled, stir-fried to stewed soup… Ribs are retailing at 38,000. VND/kg, the goods are divided into 1kg bags for the convenience of the buyer. This kind of ribs is a frozen product imported from many countries.

According to Mr. Tan, the price of imported pork is always lower than that of domestic pork. Previously, imports were not much because domestic pork prices were low. When the pork in the sauce is expensive due to the influence of African swine fever, the supply is scarce, and the imported pork is more.

Having used this product, Phuong Hoa said: “I saw many groups of online markets selling cheap ribs, so I bought them to try. Ribs with little meat, not as fresh as fresh pork, but with the price of a kilo of young ribs in the market, you can buy a few kilos of frozen ribs. In addition, because it is a frozen product, stewed soup is not as good as fresh ribs, frozen ribs are more suitable for grilled and fried dishes.”

You absolutely should not buy packages of pork that no longer retain the pink color of the meat but turn milky white, appear moldy, or see long white veins.

To be on the safe side, you should defrost slowly in the refrigerator for about 2-3 hours before cooking. Rapid defrost in the microwave for about 10-15 minutes on low heat. Do not cut off the packaging before defrosting, use up all ingredients within the same day.

Especially with frozen meat products, it should be stored at a temperature of -18 degrees Celsius or below.
