– 120g tapioca flour

Making pearls
Step 1: Put the diced coconut pieces in a large bowl. Pour 200ml of water into a clean spray bottle, then lightly wet the coconut.
Step 2: Put 1 tablespoon of tapioca flour in a bowl, use clean hands to mix well to evenly coat the starch with the coconut. Shake the bowl well. Repeat the above steps until all the tapioca flour is used up. If the pearls stick together, gently separate them with your hands.
Step 3: Strain out and remove any lumpy seeds. You can use jelly or coffee juice instead of the water in Step 2 for a brighter color of the pearls.
Boiled pearls
Step 1: Boil water in a pot over high heat. When the water boils, reduce the heat to medium and gradually add the pearls.
Step 2: Use a sieve to stir gently so that the pearls do not stick together. Cook until they turn clear and float on the water. Turn off the stove.
Step 3: Leave the pearls in the pot for 10 minutes. Strain and place in a bowl of cold water for 2 minutes.
Step 4: Take the soaked pearls into another bowl, add 30g of sugar and mix well until the sugar dissolves.
Step 5: You can put pearls in a glass with ice and 1 or 2 drops of jasmine flavor extract to make the dish more flavorful or delicious with yogurt.
