From the perspective of a nutritionist, Assoc. Prof. Dr. Nguyen Thi Lam – Deputy Director of the National Institute of Nutrition said: “Personally, I think the Japanese diet is the best in the world. It is good nutrition that keeps them healthy, that’s why the average life expectancy of Japanese people is among the highest in the world.”

Associate Professor Lam said that the advantage of the Japanese diet is the variety of foods. This is extremely important in supplementing the body with nutrients. They diversify foods in each group of substances, which is reflected in their daily meals. Specifically:

– Japanese rice, especially the diet for children, is not just plain white rice like in Vietnam. They mix white rice, corn, beans and seaweed to eat together.

– The food in the Japanese rice tray is very diverse. Fish always make up the majority of the main food and in fact the Japanese eat a lot of fish. However, they do not ignore other foods such as chicken, pork, and beef. Although each dish is only processed a little, it is very diverse in the tray of rice.

– Vegetables: This is a very remarkable point, because the Japanese rice tray always appears 4-5 different types of vegetables (not to mention fruit), such as: a few cauliflower, a few mushrooms, carrots, cucumbers… Also Like foods of animal origin, each vegetable has a small amount, but many appear in a meal.

Cooking in Japan is the main job, very important

Assoc. Lam said that when talking about food, many people often have the saying “eat Chinese food, marry Japanese” – meaning that the role of women (housewives) in Japan is very important. importance.

Accordingly, in Japanese families there is always a housewife who is responsible for making menus for daily meals. They are people with very good nutrition knowledge, even having to go to nutrition school just to serve the family’s eating. That’s why, Japanese meals have many dishes, a variety of foods, and are very balanced in nutrition.

Why is it difficult for Vietnamese to follow the Japanese diet?

Assoc. Prof. Dr. Nguyen Thi Lam said that food in Vietnam is very diverse and rich, even more than in Japan. In fact, many people know the Japanese diet is good and want to follow it, but can’t do it.

This depends on many factors such as living conditions, eating culture, knowledge of nutrition, not simply taking other people’s recipes to apply to yourself.

For example, in Japan, women are very good at housework. Vietnamese women are also very good at cooking, but in addition to housework, they have hundreds of thousands of other jobs such as working in agencies, pressure to earn money, and children. Therefore, they do not have time to learn, learn about nutrition, do not have time to cook many dishes …

Or about the dishes, in the traditional Vietnamese rice tray, there is usually only one savory dish, one vegetable dish and one soup dish. Eating a variety of foods with high protein, protein or green vegetables depends on processing time and economic conditions. “Even as we are nutritionists ourselves, the meal consists of only two dishes of vegetables, the same salty food, the day as fish, the day with meat combined with a few eggs, a few beans. Although I really want to cook a variety of foods, time is limited,” said Dr. Lam.
