“The acrid taste, the sweet and sour taste and the greasy fat of pork belly just create the feeling of a delicious meal. If you don’t have pork belly, you can use shrimp instead, or use batches to dip the tops of sauerkraut, which is also very delicious,” said Ms. Kieu Kieu.

In addition, the people of Cao Bang also use xau leaves for the Thanh Minh New Year – the grave digging ceremony on the 3rd day of the 3rd lunar month. They will take the chopped leaves, soak for about 1-2 days. When the substances from the leaves are absorbed, people squeeze out the residue, then soak the glutinous rice for 3-5 hours, then bring the items, forming a fragrant, shiny black sticky rice dish.

“It is an indispensable sticky rice dish of the Tay and Nung ethnic groups in the eastern districts of Cao Bang province, which they bring to worship their ancestors on the occasion of the burial ceremony,” shared Ms. Kieu Kieu.

The woman also affirmed that anyone who has tasted it once cannot forget the taste of this dish made from spinach – one of these specialty forest vegetables.
