American company builds 10 largest bioreactors in the world to produce artificial meat

Good Meat estimates the new bioreactors will have the capacity to bring to market 13,700 tonnes of chicken or beef annually.
According to News Agency Sputnik, Good Meat was the first company in the US to sell lab-grown meat (artificial meat) commercially. This place has been supplying fried chicken nuggets to a restaurant in Singapore since 2020.
Construction of a new complex of 10 bioreactors has begun in the US. Each bioreactor will be about 17m high and have a capacity of 250,000 liters of the culture medium to create the finished meat product. The facility will be operational in 2024.
The company is also building a 6,000 liter bioreactor in Singapore, scheduled for completion in early 2023.
Good Meat is one of about 170 companies in the US that are supplying lab-grown meat. However, there are many challenges that these companies face.
Currently, companies are focusing on producing minced or ground meat, along with processing this meat into food to bring to customers. However, creating different cuts of meat, like a T-bone steak or filet mignon, is much more difficult.
Meat from slaughtered animals has tendons, fat, and muscle. An animal’s age and activity level, especially body parts, both have a strong impact on the texture and flavor of its meat. This is a big challenge for lab-grown meat when it wants to “conquer” consumers in the long run.
Chemically, lab-grown meat is identical to slaughtered animal meat.
Meat production begins by taking a cell from a live animal and inserting it into a growing serum until it becomes a viable culture known as a cell line.
In the past, developing serums have been made using bovine fetuses, but Good Meat says it has created a serum that doesn’t require slaughter animal by-products.
After a cell line is created, scientists take a small sample and grow it until the cells reproduce enough to form cuts of meat that can be sold to shops and restaurants.
