Sashimi dish ‘smooth sailing’

The soul of the dish is the natural yellow flounder of Jeju Island, Korea. This fish lives only in clean sea water. Only fish weighing 1 kg or more can be processed as sashimi because the quality of the meat is guaranteed. After catching and putting fish on the boat, fishermen should minimize touching because it will make the fish no longer keep its freshness. They let the fish rest and relax in the water tank for 1-2 days. With a special structure, it is considered an exotic fish with a thin, yellow body, two eyes located on the same side.

When processing, the clear and soft white fish meat is filtered and filleted to form a piece of sashimi shaped like a gold bar. The head, fins, and stiff spine are decorated by the chef into a winding mast, implying a proud boat reaching out to sea. All are placed on natural stone bowls.

Mr. Pham Ba Ha, chef with more than 20 years of experience, President of VICA Hanoi, said that fish dishes can only be served by skilled chefs. “The chef must know the best storage time for the fish before serving the customer. The flounder is a type that cannot be preserved for long. Once the fish has been slaughtered, it must use special paper to absorb the water, put it in the refrigerator at 2-3 degrees. and enjoy after about 10-15 minutes, make sure the fish is crispy”.

Huynh Trung, 25, a customer enjoying sashimi, said: “I can’t eat salmon because it feels a bit greasy, but this halibut is easier to eat, especially when wrapped with seaweed, very fragrant. presented in a beautiful “smooth sailing” style, stimulating the appetite.

Fish meat has a sweet, slightly fatty taste, smooth like butter slices and has no bones, safe for children and the elderly. Yellow flounder contains a lot of Omega 3 and minerals, good for the body, has the effect of preventing cancer, reducing inflammation, regulating blood pressure, stabilizing the heart.

One flounder is suitable for a meal of about 4-5 people, supplemented with protein, iron and trace elements. In addition, eating a lot of yellow flounder also stimulates young brain development, limiting memory loss in the elderly. Therefore, “Smooth sailing” was chosen in the opening occasions not only for symbolic purposes but also to provide diners with abundant health to be happy in work and life.
