Phuong Mai (in Dien Bien City, Dien Bien province) – a small trader who sells green rhubarb for many years sharing, not only people in the province but also tourists from all over the world love this fruit. Pickled greens are often used, served with cabbage, scallions, herbs and a signature dipping sauce.

“Initially, I only shipped and sold in provinces and cities, but over the past few years, customers in Hanoi and Ho Chi Minh City have bought a lot, so I send vegetables everywhere. At the beginning of the season, there are few of them, so the price of green grasshoppers is high, around 100,000 VND/kg. In season, the price is cheaper, only 40,000-50,000 VND/kg,” said Mai.

This small trader also says that the green beans are sold separately or in the sets that are available, full of vegetables, herbs and sauces. Depending on the location, the green grasshoppers are transported by plane or passenger car to ensure quality and maintain their natural freshness.

According to Mbak Mai, if you want the green one to be delicious, the food is not too sour or spicy, you have to choose a cake that is small as big as the tip of your thumb and quite young. Before eating, it is necessary to rub a layer of white chalk on the outside of the fruit, then wash it and cut it in half.

With cabbage rolls, the diagonal is considered the most important. This sauce is made of ginger, garlic, chili, herbs, mac khen and doi seeds. Puree all ingredients, mix with salt or fish sauce, until it forms a thick mixture to help the dish taste better and more delicious.

When eating, people place the pieces of basil, spices, diagonally on top of the cabbage, roll it up and then rub it in a special sauce. Depending on the location, the sections are made from different materials to suit individual tastes and preferences.

Guests who enjoy the polka dot patterned green cabbage rolls for the first time often feel “grinning”, finding it difficult to eat because of the strange taste. But those who eat it and get used to it will find it delicious and interesting. This dish is considered to have a moderately sweet and sour taste, harmonizing the cool flavors of the spices and cabbage with the mild nutty flavor of the green cloves, combined with a hint of pungent ginger and garlic flavours.

Ms. Ha Minh (living in District 1, Ho Chi Minh City) shared, 2 years ago, when his friends first invited him to try it, he fell in love with the strange taste of this Northwest dish. After the last Tet holiday, knowing that the green leaf season was coming, he asked an acquaintance to pre-order 2 kg to be sent to the South, making this dish himself to treat the whole family to “get rid of boredom”.

“In the past, I used to eat cooked pork belly, but when I heard about the green roll with cabbage dipped in diagonal dots, my family and I loved it. In the South, this fruit is not popular, so it is difficult to buy, I had to ask an acquaintance in Son La to send it to me. The shipping cost was several times the purchase price, but since I love to eat, I invested anyway.

Not to mention the pre-processing of the green beans is also quite good, it takes a lot of time to remove the white lime, but the taste of the dish has compensated well. Sometimes I also pickle green chilies with salt and pepper or turn them into several different dishes to enjoy,” said Ms. Minh.
