1. Ingredients for making sticky rice yogurt

– Sticky rice: 0.5kg
– Coconut milk: 200ml
– Brown sugar: 200g
– Fine salt: half a teaspoon
Yogurt white: 1 box

2. How to make sticky rice yogurt

Step 1: Cook sticky rice

Soak the glutinous rice for at least 6-8 hours (can soak overnight) then wash it thoroughly. Next, pour rice into a saucepan and add filtered water and half a teaspoon of fine salt to a medium heat. Boil until the water boils, then add pandan leaves to cook.

Continue to boil until the water is almost dry, then remove the pandan leaves, add 200ml of coconut milk and 200g of brown sugar, stir well. Cook for another 15 minutes, taste it, if you find that the sticky rice is soft, turn off the heat.

Step 2: Make yogurt

Put the pot on the stove, put 2 liters of unsweetened fresh milk and 1 can of condensed milk into the pot and cook on low heat until the milk boils, then turn off the heat.

Next, pour the cooked milk into a clean bowl and let it cool. When the mixture is still warm about 50 – 70 degrees Celsius, you add 1 box of yogurt, stir well.

Step 3: Incubate yogurt

Put the yogurt mixture into each small jar, then put the jars into the rice cooker. Next, pour warm water about 80 degrees Celsius, cover 2/3 of the yogurt jar, cover the rice cooker, turn on the heating mode for 15-20 minutes and then unplug the power cord.

After about 2 hours or until the water in the pot cools down, plug the power cord back in, leave the heating mode on for 15 minutes. Repeat this process until the yogurt is finished incubation (about 6-8 hours).

Step 4: Enjoy

When the sticky rice has cooled down, put it in a glass, pour yogurt on top, mix well and enjoy. You can add ice cubes or combine pearls of all kinds into a cup of sticky rice yogurt to make the dish more delicious and attractive.

3. Some notes when making and preserving sticky rice yogurt

To cook delicious sticky rice, you should choose dark purple sticky rice seeds, light yellow belly, slightly flattened shape but not too flat but still round. Should choose the grains of sticky rice that are firm, not easily broken, broken, the surface of the seeds does not have humus or appear strange colors. Avoid buying sticky rice with unusual color and scent, signs of mold because this is poor quality sticky rice.

If you do not eat all of it, you can put the yogurt in a glass jar and put it in the refrigerator compartment at a temperature of about 8 degrees Celsius because the cold temperature will slow down the fermentation of yogurt, the milk will take longer to sour and less risk of bacterial infection. Should be used within 2-3 days.

With sticky rice, if you don’t eat it all, you can put it in a bowl and keep it in the refrigerator for 2-3 days. When you want to eat, you can steam it again to make it soft and flexible and eat it with yogurt.
