  • 100g rice noodles
  • 150g chicken breast
  • 350 ml chicken broth
  • 20g ginger
  • A clove of garlic
  • A stalk of lemongrass
  • 2 lemon leaves
  • 2 stalks of celery
  • A carrot
  • Scallion
  • 100 g enoki mushrooms
  • 10g cilantro
  • One tablespoon of peanut oil
  • 2 tablespoons soy sauce
  • One tablespoon oyster sauce

Making

Step 1:

  • Lightly crush lemongrass.
  • Peel the ginger and chop finely.
  • Peel the garlic, remove the green sprouts (if any) and mince.

Step 2:

  • Heat peanut oil, saute garlic and ginger.
  • Put the soy sauce and oyster sauce in the pot, then add the chicken broth.
  • Add lemongrass, lime leaves and bring to a boil.

Step 3:

  • Cut the celery into sticks and the carrots into small pieces.
  • Cut chicken breast into bite-sized pieces.

Step 4:

  • Place the celery, carrots and chicken in the broth and cook for 5-10 minutes until fully cooked.

Step 5:

  • Soak the rice noodles in hot water according to the instructions on the package.

Step 6:

  • Cut the scallions into small pieces.
  • Cut off the stalks of the enoki mushrooms and finely chop the cilantro.

Step 7:

  • Put the rice noodles, scallions, shiitake mushrooms and cilantro in the broth.
  • Ladle into a bowl and enjoy immediately to feel the full chewiness of the noodles, mushrooms and cilantro that still retain their color.
