In the past, dolphins were a dish of poor cooks, but now it is a specialty that only the rich can enjoy. Because it is off-season, the price of dolphins is quite expensive. Currently, wild-caught dolphins are 750,000 VND/kg. Fish is always in a state of “sold out”, if you want to buy, you must order in advance.

Meanwhile, due to its high economic value, many people also raise dolphins in cages. The main food of the pigs is bran mixed with raw fish puree. Fish eat twice a day in the early morning and at sunset. Fish raised from 7-10 months can be harvested and raised with a maximum weight of 100g/fish. Farmed dolphins are being sold at the price of 650.00 VND/kg.

Western dolphins can process many different dishes such as: grilled, braised (with pepper stock, lemongrass stock, braised with tofu), cooked with sour soup, etc. When processing, special attention should be paid to adding a little vinegar. in the process of preparing the fish, then gently rub the oil on the body of the fish with your hands, as well as to reduce the fishy smell of the whole fish.

Male dolphins often have small, long bodies, striped skin, and meat that is not as delicious as female dolphins. The fish meat is soft, fatty but not greasy, so it’s very tasty.
